A hidden gem with authentic Roman food. We ate the Carbonara and the Amatriciana. They served the best Carbonara we've ever eaten. It's a must try! We also ate the meatballs which are not on the menu, but if you ask the staff they'll serve this to you. This was also really good. The house red wine went really well with the food. Offc we ended with a lovely Tiramisu. All in all, the place was a brilliant find.

We arrived right when the restaurant opened, eager to try their offerings. The stuffed fried olives were a standout—crispy, flavorful, and absolutely delicious. As for the patata de salsiccia, it was decent, though we wished the sausage had a bit more spice to elevate the dish. Overall, a solid experience with some great flavors!

My wife and I just tried "Core De Roma" on our first night in Rome....and this place DOES NOT disappoint. As self-proclaimed foodies, we were blown away by the dishes. To start, we had a platter of cheese, burrata, and a fresh artichoke appetizer which came with a delectable cheese reduction. We then had a pasta carbonara - the pasta was fresh, favourable and the portion size was great. To top it off, we had a special "invention" that the waiter brought over to us! We basically told him to get us what he thought was best.....and I'm glad we put our trust in his hands! I would HIGHLY recommend coming to this establishment. It's away from the touristy areas and the best way to get an authentic experience.
